Ingredients

  • 1 pint Padron peppers
  • 2 ozs Feta cheese
  • 12 T Extra virgin olive oil
  • Maldon salt or other flaky salt

Instructions

  1. Heat a wide non-stick pan on high until good and hot.
  2. Add the peppers and cook them over medium, tossing and turning them frequently until they blister.
  3. Transfer peppers to shallow serving bowl.
  4. Add the crumbled feta.
  5. Drizzle with great olive oil.
  6. Sprinkle the peppers with the flaky salt and serve.
